  11. En el vaso, nata, agua, azúcar y cacao puro; 6 minutos, 100º a velocidad 5.
  12. Agregamos la gelatina escurrida, 30 segundos a velocidad 5. Reservamos en un bol cubierto con film, dejamos templar.
  13. Desmoldamos la mousse que tenemos en el congelador sobre una rejilla. Bañamos el brazo con la cobertura ya templada. Llevamos al congelador.
  14. Fundimos el chocolate blanco con el chorrito de nata y decoramos el brazo. Reservamos de nuevo en el congelador. Sacamos 10-15 minutos antes de consumirlo.
