  1. La noche anterior tenemos que preparar el poolish. Mezclar los 3 ingredientes, yo use me thermomix, poner en un bol y tapar. Dejar toda la noche, yo lo deje en la mesa de la cocina.
  2. Al día siguiente echar el poolish, que ha aumentado su volumen en en vaso de la thermomix, echar encima el resto de ingredientes excepto las semillas y programar 1 minuto velocidad espiga. Lo dejamos reposar 15 minutos.
  3. Esto lo repetimos 5 veces...programamos 1 minuto y dejamos reposar 15.
  4. Lo sacamos del vaso...hacemos una bola y dejamos reposar en un bol hasta que aumente su volumen.
  5. Ahora amasamos un poco encima de la encimera de la cocina y con un rodillo hacemos un rectángulo, le echamos las semillas por encima y vamos enrollando lo ponemos en un papel de horno y una bandeja espolvoreamos un poco de harina y unas pocas semillas, tapamos y dejamos reposar otra hora.
  6. Antes de meter al horno hacemos unos cortes profundos y al horno los primeros 15 minutos a 250° después bajamos el horno a 180°hasta que veamos que esta dorada. Yo la tuve 30 minutos.
