  1. Primero he hecho un fumet, triturando las cabezas y cáscaras de los 4 gambones, junto a una cucharada de Aove y una cebolla pequeña. Luego he añadido 400 g de agua, sal y lo he calentado 10 minutos, colado y reservado. Lo hice en Thermomix.
  2. En una fuente con fondo de Aove he sofrito el pimiento, cebolla y ajos muy picados. Una vez listos he añadido las anillas unos minutitos.
  3. Una vez listo, he apartado a los lados de la fuente y en el centro he añadido el tomate, perejil muy picado, sal y hoja de laurel, después de unos minutos remover e integrar con el resto de ingredientes.
    👉 Añadimos la pasta con azafrán y removemos bien todo junto. Sí prefieres sustituye por arroz.
  4. 👉 Añadimos el fumet (el doble de mi vaso medidor de pasta) rectificamos de sal y tenemos a fuego medio- bajo unos 8-10 minutos, en los últimos minutos colocamos los gambones pelados, después apagamos el fuego y dejamos reposar absorbiendo todo el caldo.
  5. Una vez reposado. Queda meloso, pero a la vez, un poco socarrat por abajo.
