- Como en toda receta de bollería, iniciaremos mezclando los ingredientes secos: la harina de arroz y la levadura, yo suelo usar de la marca HACENDADO pues es libre de gluten, en cuanto a la harina de arroz yo recomiendo la compréis en el supermercado (también la hay de marca HACENDADO) pues lo ideal es que sea harina muy fina. Ya he usado antes harina hecha en casa con la thermomix y no queda igual de fina, por lo que no la recomiendo.
- Luego, en otro cuenco, mezclaremos los ingredientes húmedos: el huevo lo batimos vigorosamente y añadimos el azúcar y la leche , añadir la ralladura de limón y posteriormente el puré de manzana, puede ser la manzana rallada pero muy muy fina.
- Añadiremos poco a poco la harina de arroz mezclada con la levadura, de ser posible tamizada, removemos a la vez que integramos los ingredientes hasta que no se noten grumos en la mezcla.
- Precalienta el horno a 180 grados durante unos 15 minutos, mientras, prepara unos moldes de magdalena ya sea de papel, aluminio o silicona, y rellenalos a 3/4 partes colocandolas en una bandeja, espolvorea un poco de azúcar granulada por encima para hacer un poco de decoración.
- Hornea durante unos 35 minutos hasta que se noten doraditas por encima. Introduce un palillo de madera apara comprobar que estén bien hechas por dentro antes de retirar.
- Dejar enfriar y a disfrutar... te sorprenderás de lo deliciosas que están! que aproveche!!!
