    Pasado ese tiempo lo dejamos templar hasta que alcance los 50 ºC (aquí es donde entra en juego el termómetro de caramelo) y entonces añadimos el bicarbonato y batimos unos segundos.
    Lo dejamos reposar hasta que adquiera el color de la clara de huevo sin hacer y entonces, quitándole la capa de espuma que queda por encima, lo vertemos en un tarro de cristal hermético.
  2. * Con Thermomix:
    Ponemos en el vaso el azúcar, el agua y el zumo de limón y programamos 10 min, Varoma, vel 2. Dejamos enfriar hasta alcanzar los 50 ºC y añadimos el bicarbonato programando 10 seg, vel 4.
    Dejamos reposar hasta que quede como la clara del huevo sin hacer y quitamos la capa blanca de arriba (si es que os queda). Lo ponemos en un tarro de cristal y listo.
